Salmon Tomato Pasta

Ingredients
400 g spaghetti (or any pasta of choice)
4 vegan salmon fillets
1 large red onion, finely chopped
200 g vegan cream cheese
250 g cherry tomatoes, halved
A handful of fresh basil, roughly chopped
Salt and pepper, to taste
2 tbsp olive oil
30–40 g vegan Parmesan, grate
Preparation
Cook the pasta according to the instructions on the package.
Heat olive oil in a pan and briefly fry the vegan salmon. Then cut the cooked salmon into small cubes.
Finely chop the red onion and sauté it in the pan.
Add a generous amount of vegan cream cheese along with a splash of pasta water, and stir until a creamy sauce forms.
Add the cooked pasta and the salmon, and mix everything well.
Season with salt and pepper.
Serve with fresh basil and, if desired, cherry tomatoes and vegan Parmesan.

Heat oil in a pan. Pan fry at medium heat for at least 8 minutes stirring regularly.
Heat in a pre-heated air fryer for at least 8 minutes at 200°C.
Heat in a pre-heated oven for at least 7 minutes at 225°C.
