Salmon Sandwich

Ingredients
Ingredients for the dressing:
4 tbsp vegan yogurt or vegan mayonnaise
2 small pickles, finely chopped
¼ red onion, finely chopped
1 tbsp fresh dill, chopped
1 tbsp capers (optional), chopped
Salt and pepper, to taste
½ tsp garlic (fresh or powder)
Other ingredients:
2 baguette rolls
½ cucumber, sliced
2 plant-based salmon fillets
Preparation
Mix the vegan yogurt/mayonnaise with the finely chopped pickles, red onion, dill, and optional capers.
Season with salt, pepper, and garlic to taste.
Cook the plant-based salmon fillets in a pan according to the package instructions.
Slice the baguettes horizontally and lightly toast them for extra crunch.
Assemble the sandwiches:
Spread a generous layer of the sauce on both halves of the baguette.
Place the cucumber slices on the bottom half.
Lay the plant-based salmon neatly on top of the cucumber.
Optionally add some extra dill for freshness.
Close the baguette and serve immediately.

Heat oil in a pan. Pan fry at medium heat for at least 8 minutes stirring regularly.
Heat in a pre-heated air fryer for at least 8 minutes at 200°C.
Heat in a pre-heated oven for at least 7 minutes at 225°C.
