The Ultimate Vega Left-over Sandwich

  • 6 slices of bread
  • 100 grams of vegan cheese
  • 2 Vivera chicken breast fillets
  • 2 tablespoons of olive oil
  • 250 grams Christmas leftover vegetables
  • 4 tablespoons Cranberry sauce
  • 2 tablespoons vegan mayonnaise

What to do

Preheat the oven to 200°C. Place the bread slices on an oven rack and sprinkle four of the slices with the vegan cheese.

Fry the chicken fillets in the olive oil in 3 minutes per side until golden brown and cooked. Sprinkle with salt and pepper.

Slice the chicken breast and the Christmas vegetables.

Take the buns out of the oven and spread the cranberry compote on the cheese layers. Spread the chicken and vegetables over those layers and finish with a spoonful of mayonnaise. Make two stacks of the sandwiches, ending with the bare bun on top and pressing the sandwich down well.

Serving tip:: You can use all kinds of leftovers for this recipe, but we used the leftovers from the complete vega Christmas dinner!

Plant Chicken Breast Style

Heat oil in the pan. Fry at medium heat 7 minutes and turn regularly.

Heat 6 minutes at 200°C.
