Chilli sin carne

Vivera

1 tbsp oil
1 red onion, finely chopped
2 cloves of garlic, pressed
1 pack of Vivera plant mince
200 g can of kidney beans, rinsed and drained
400 g can of diced tomatoes
1 tsp chilli con carne seasoning
1 bag of vegan nacho chips

Optional:
Fresh coriander to garnish
1 avocado, sliced, to serve

What to do

Heat the oil in a large frying pan. Fry the chopped onion with the garlic for 2 minutes. Add the Vivera mince. Season with a pinch of salt and freshly ground pepper. Fry for a few minutes. Add the kidney beans, diced tomatoes and seasoning. Add a splash of water if the mixture is too dry. Simmer for around 10 minutes.

Season to taste.
Garnish with coriander and avocado if used. Serve with the nacho chips.

Tip: also tastes wonderful with rice.

Heat oil in the pan. Fry at medium heat 4 minutes and turn regularly.
