Chilli sin carne

Ingredients

  • 1 tbsp oil
  • 1 red onion, finely chopped
  • 2 cloves of garlic, pressed
  • 1 pack of Vivera plant mince
  • 200 g can of kidney beans, rinsed and drained
  • 400 g can of diced tomatoes
  • 1 tsp chilli con carne seasoning
  • 1 bag of vegan nacho chips

Optional:

  • Fresh coriander to garnish
  • 1 avocado, sliced, to serve

Preparation

  1. Heat the oil in a large frying pan. Fry the chopped onion with the garlic for 2 minutes.
  2. Add the Vivera mince. Season with a pinch of salt and freshly ground pepper.
  3. Fry for a few minutes. Add the kidney beans, diced tomatoes and seasoning.
  4. Add a splash of water if the mixture is too dry. Simmer for around 10 minutes.
  5. Season to taste.
  6. Garnish with coriander and avocado if used. Serve with the nacho chips.

Tip: also tastes wonderful with rice.
