Spinach fillet with Tomato and basil salad

1 package of Vivera Spinach fillet

150g mixed red and yellow

cherry tomatoes, halved

3 spring onions, finely chopped

A handful of basil leaves, torn

2 tablespoons olive oil

2 teaspoons balsamic vinegar

A pinch of sugar

Salt and pepper to taste

What to do

Slice in half 150g mixed red and yellow cherry tomatoes,  ad lace in a bowl with 3 chopped spring onion, handful of torn basil leaves, 2 tbsp olive oil,  2 tsp balsamic vinegar, pinch of sugar and salt and pepper. Leave to marinate whilst you cook the spinach fillets. Add 70g Italian salad leaves to the tomatoes and toss together. Serve alongside the spinach fillets with sweet potato fries. Scatter with a few more basil leaves if liked.

Serving tip:: Delicious with some coarsely chopped olives in the salad!

Plant Spinach Fillet

Heat oil in the pan. Fry at medium heat 6 minutes and turn regularly.

Heat in a pre-heated oven for 6 minutes at 200°C.

Heat in the airfryer for 8 minutes at 200°C.
