Mini Yorkshire Pudding Bites with Vivera Plant Steak

Ingredients
1 Vivera Plant Steak
90g plain flour
25g cornflour
170ml plant milk
155g silken tofu
1 heaped tsp baking soda
1 tbsp apple cider vinegar
Vegetable oil
Dill (to garnish)
Plant-based horseradish + gravy
Preparation
Heat oven to 220°C. Add a little oil to a 12-hole muffin tray and warm it in the oven for 5 mins.
Blend plant milk + silken tofu + cider vinegar until smooth.
Mix flour + cornflour + baking soda + pinch of salt in a bowl.
Whisk the tofu mixture into the dry ingredients gradually to avoid lumps.
Ladle the batter into the hot muffin tray and bake 18–20 mins until risen and golden.
Cook the Vivera Plant Steak per pack instructions, let it cool slightly, then slice thinly.
Fill each mini Yorkie with gravy, steak and a dab of plant-based horseradish.
Top with dill, and enjoy!
