Harissa Plant Salmon

Vivera

1 heaped tbsp harissa paste

2 Vivera Salmon fillets

1 lemon, finely sliced

200g bunch asparagus, washed

Boiled new potatoes, to serve

What to do

1. Preheat oven to 200˚c. Line a baking tray, and add the lemon slices in one layer, in the centre. 

2. Rub the harissa paste into each plant salmon fillet, and place on top of the lemon slices. 

3. Place the asparagus spears around the salmon, in a single layer. Drizzle all over with a little olive oil, and season with salt and pepper.

4. Roast in the oven for about 15-20 minutes, giving the asparagus a little turn half way through cooking.

5. Serve with new potatoes.

Salmon Fillet

Heat oil in the pan. Fry at medium heat 8 minutes and turn regularly.

Heat in a pre-heated oven for 7 minutes at 225°C.
