Spicy quinoa-salade with Thai protein bites

Ingredients
150 g quinoa
1 tbsp peanut butter
1 tsp sambal oelek (or sriracha)
1 tsp soy sauce
Juice of 1 orange
2 cloves of garlic, pressed
1 pack of Vivera Thai protein bites
4 mini cucumbers, cut into thin ribbonsGarnishing tip: coriander
Extra tip: can also be made as a mealprep salad!
Preparation
Cook the quinoa according to the instructions on the packet.
Mix the peanut butter with the sambal, soy sauce, orange juice and garlic in a small bowl to make a dressing.
Heat the Vivera Thai protein bites according to the instructions on the packet.
Mix the quinoa with the dressing and cucumber and spoon onto two plates.
Divide the Vivera Thai protein bites between the plates. Garnish with some coriander, if desired.

Heat oil in a pan. Pan fry at medium heat for at least 4 minutes. Turn regularly.
Heat in a pre-heated oven for at least 5 minutes at 225 °C.
Heat in a pre-heated airfryer for at least 4 minutes at 200 °C.
