Warming Indian curry with Vivera plant chicken pieces

Ingrediënten
200 g basmati rice
1 tbsp oil
1 onion, finely chopped
2 cloves of garlic, pressed
1 pack of Vivera plant chicken pieces
2 tsp vadouvan spice blend *
½ tsp chilli powder *
1 tbsp tomato purée *
400 ml coconut milk
Optional:
Naan bread, to serve
Coriander, to garnish (optional)
*Or use Indian curry paste from a jar.
Preparation
Prepare the rice according to the instructions on the packet. Leave to steam with the lid on the pan.
Heat the oil in a frying pan. Fry the chopped onion with the garlic.
Add the Vivera plant chicken pieces. Season with a pinch of salt and pepper. Fry for 5 minutes.
Add the vadouvan spices and chilli powder. Stir well.
Add the tomato purée and coconut milk. Simmer for 10 minutes.
Serve with the rice. If you like, garnish with fresh coriander and serve with naan bread.

Heat oil in a pan. Fry at medium heat for at least 4 minutes stirring regularly.
Heat in a pre-heated air fryer for at least 3 minutes at 200°C.
Heat in a pre-heated oven for at least 3 minutes at 225°C.
