Cook the Vivera Protein Bites – Cook according to package instructions until golden and crispy.
Char the sweetcorn – Pat the drained corn dry. Heat a dry non-stick pan over high heat and cook the corn for 4–5 minutes, stirring occasionally, until lightly charred.
Season the black beans – Heat a splash of olive oil in a pan, then add black beans with smoked paprika, cumin, garlic powder, salt, and pepper. Cook for 2–3 minutes until warmed through and fragrant.
Make the smashed avocado – In a small bowl, mash the avocado with lime juice, salt, and a pinch of pepper until creamy.
Make the tomato & onion mix – In a separate bowl, combine cherry tomatoes, red onion, chopped coriander, and a pinch of salt. Let sit for a few minutes to slightly soften.
Assemble the bowl – Start with brown rice, then add black beans, charred corn, crispy Protein Bites, smashed avocado, and the tomato-onion mix.
Top with jalapeños and serve with extra lime wedges if desired.
