Plant Salmon en Croute

- 2 Shallots
- Olive oil
- 2 Cloves Garlic
- 400g Spinach
- 3 tbsp. Cream cheese
- The zest of ½ lemon
- Salt & pepper
- Puff pastry
- 2 Packs Vivera Salmon Filet
- Milk to glaze the pastry
What to do
- Finely slice the shallots and fry in a little olive oil. Grate in the garlic and cook until softened
- Add the spinach and cook until wilted
- Stir in the cream cheese, lemon zest and salt and pepper. Leave the mixture to cool completely
- Lay out one sheet of puff pastry. Add the spinach mixture and salmon fillets. Then top with the second sheet of pastry. Press lightly around the pastry to remove any air.
- Cut the pastry into the shape of a fish and decorate. Press the edges with a fork to create a seal
- Brush with the milk
- Bake for 30- 35 minutes at 190° or until golden brown 8. Top tip after 25 minutes of cooking glaze again with the milk to create an even golden color.
