Steak with Chimichurri sauce and wedges

Vivera

1 package of Vivera Plant steaks

2 tomatoes, halved

(Sweet) potato fries

A few salad leaves

2 tablespoons chopped parsley

2 tablespoons chopped coriander

1 clove garlic, finely chopped

1/2 red chili, finely chopped

3 tablespoons olive oil

1 tablespoon red wine vinegar

Salt and pepper to taste

 

What to do

Heat a griddle pan. Brush the plant steaks and a halved tomato with a little oil then add to the hot pan. Cook for 8-9 mins turning the steaks over once. Remove the tomatoes after 4 mins.

For Chimichurri sauce, in a bowl mix together: 2 tbsp each of chopped parsley and coriander, 1 crushed garlic clove, 1/2 chopped red chilli, 3 tbsp olive oil, 1 tbsp red wine vinegar and season well. Serve the steak, tomatoes and sauce with (sweet )potato fries a few salad leaves.
